Selvis Whipping Agent – For more than forty years, the SELVIS range of products has been used by the most important confectionery industries.

Properties

A small quantity of SELVIS provides:

  • Simultaneous mixing of all sponge cake ingredients
  • A whipping process in an extremely short period of time (3 minutes with the slowest of planetary equipment),  thanks to its ability to facilitate the airing of the dough
  • Stability of the dough for at least 2 hours after the emulsifying phase
  • Progressive and constant development during the baking
  • Preservation of the products thanks to its anti-staling effect

 

Applications

 

The production of sponge cakes, paradise cakes, ladyfingers, plum-cakes and generally in all confectionery products made from beaten eggs with or without the presence of fat.

Product Range

From our range customers can choose the type of SELVIS most suitable for their production:

  • SELVIS E/SELVIS C/SELVIS Z: standard, for all types of use (production of sponge cakes, paradise cakes, ladyfingers, plum-cakes and generally in all confectionery products made from beaten eggs with or without the presence of fat).
  • SELVIS D: concentrated formula for all types of use (production of sponge cake,  paradise, ladyfingers, plum-cakes and generally in all confectionery products made from beaten eggs with or without the presence of fat). It can also be used in the production of ice creams.
  • SELVIS ROLL: formula specifically made for the production of rolled sponge cake (rolls, swiss rolls, etc.).

All products are available with mono glycerides either from RSPO certified palm oil or from other vegetable sources.

Storage & packaging

Thanks to its specific formula SELVIS remains effective for over 12 months.
